During the warmer months, it's all about the barbeque. Of course, we have been known to barbeque during winter in the snow, but for the purpose and timing of this discussion, when it's summer in the northern hemisphere, almost everyone fires up the barbeque. Because research has suggested that barbequing meats can increase cancer risks associated with charred food, the
Dana Farber Cancer Institute offers these tips to grilling red meats, poultry and fish safely:
- Choose lean cuts of meat. Trim excess fat and remove the skin.
- Avoid thick marinades, as they increase charring. Use thin marinades that have vinegar or lemon as one of the ingredients.
- Flip burgers once every minute.
- Place food at least six inches away from the heat source.
- Line the grill with perforated aluminum foil to prevent drippings from creating smoke.
- Cook on cedar planks.
- Consider kabobs. They take less grilling time.
- Consider grilling your favorite vegetables instead of just meat.
These tips are followed with some common sense advice. If you avoid charring all the red meat, poultry and fish you barbeque, the expert nutritionists at the Dana Farber Cancer Institute state that your risk of getting cancer from grilling food is extremely low. According to the information, not eating a diet rich in fruits and vegetables is a bigger risk factor for cancer than eating the occasional barbequed meats. I like common sense perspective.

The world is a dangerous place for the trusting and the innocent -- which is probably one of the reasons we have some of the laws we do to protect everyone.
Still, even with laws in place, it seems we are not all that safe. Frankly, I am disturbed by what I learned that I did not know about prescription drugs being dispensed in this country and the estimated number of those prescriptions that are counterfeit drugs. Drugs of ineffective strength. Drugs made with unknown chemicals. Drugs switched with less expensive drugs meant for another medical condition. Basically -- the wrong drugs.

The
Asian paradox is a reference to the fact that although more people smoke more cigarettes in Asia, they are diagnosed with cancer in far fewer numbers than would be expected.
Researchers keep going back to
green tea as the possible preventative to cancer, as the incidence of cancers is much lower in Asia compared to other countries. Yale School of Medicine researchers reviewed 100 experimental and clinical studies and found that drinking green tea might indeed be the reason in the lower incidence of cancer.
According to the researchers, the average 2.5 pints of green tea consumed daily by many people in Asia offers the antioxidant protective effects of the polyphenolic EGCG, which has been shown to play a key role in the prevention of tumor growth.
I think too, there is a synergy to the diet as a whole that researchers might not have discovered that plays a role in offering cancer prevention. In my personal opinion, I don't think it will be one food or liquid that will be the reason. The Asian diet pyramid is second in health only to the Mediterranean diet pyramid.

Consumer Reports has completed a review of the FDA testing on mercury levels found in canned tuna and i
ssued new safety concerns. While the focus is on a clear alert for pregnant women and the damage mercury-contaminated tuna can cause to a developing fetus, mercury is also known to have an adverse effect on the immune system of adults. For anyone interested in cancer prevention, a healthy immune system is a vital first-line defense to keeping cancer from developing in the first place. Mercury, once consumed, can stay in the body for years.
Because of the new information provided by Consumer Reports regarding the dangers of canned tuna, and because fish is an excellent cancer prevention food, here is a list of fish that have shown consistently low-levels of mercury during testing and are safe to eat daily.
Wild salmon and tilapia can be safely eaten every day. Flounder, sole, mullet, Atlantic mackerel and crab can be safely eaten once a week. In addition, Consumer Reports found fish-oil supplements to be a safe, reliable way to get omega-3 fatty acids. You can check state agencies and the Environmental Protection Agency advisories for contaminant levels of fish caught where you live

The Food and Drug Administration, FDA, announced it has
identified the following soft drinks as containing high levels of benzene, a chemical known to cause cancer:
- Crush Pineapple
- Safeway Select Diet Orange
- Crystal Light Sunrise Classic Orange
- Giant Light Cranberry Juice Cocktail
- AquaCal Strawberry Flavored Water Beverage
Dr. Laura Tarantino, director of the FDA's Office of Food Additive Safety, said drinking sodas high in benzene does not pose a health risk -- while the people at the Environmental Working Group accuses the FDA of past and present suppression of information about benzene in soft drinks and views the benzene levels in soft drinks a problem. "FDA's test results confirm that there is a serious problem with benzene in soda and juices," said Richard Wiles, senior vice president at Environmental Working Group.
Basically, the problem is
sodium benzoate and
ascorbic acid, which together form benzene. Benzene is a known cancer-causing chemical.
This is a problem that has been going on for years -- both here and in Europe. Over the months we have reported on the possible cover-ups and controversy related to the cancer risks of some soft drinks and about the good guys and bad guys of this continuing story. Admittedly, for years I was a sun worshipper in quest of the perfect golden tan. But I noticed as the years went by the sun was changing, the effects were different, it did not feel as good to be out in the sun for long periods of time. I burned too quickly, tanned far less. I thought it was my imagination, or my age, but I have since learned that the ozone is thinning and the result is an altering in the intensity of the sun's rays. I practice sun safety these days.
When I was telling you about Olay's
Bring a Buddy free skin cancer screening campaign, I read a heartbreaking personal story about Dr. Maribeth Bambino Chitkara losing Melissa, her sister, to melanoma at an early age. Who worries about the sun when they are young? I didn't, and most young adults don't. A mole on Melissa's right shoulder had become cancerous, and the cancer had spread to many of the lymph nodes under her arm. Despite treatment, between the two years of skin cancer diagnosis and death, the cancer continued to spread throughout Melissa's body, including her brain. The story, although a very sad one in the loss of a cherished and beloved sister and best friend, I recommend it for reading. The

May is National Skin Cancer Awareness Month. Become aware and educated about the risks of skin cancer and sun safety. The sun is changing -- the damaging rays increasing in intensity. Even the very young need to be protected, and no one today can afford the risks from a golden tan.

The Environmental Protection Agency has created the SunWise School Program and
SunWise Kids, as an environmental and health education program offering
teaching tools for schools, communities and kids in learning about sun safety. From building shade structures to sun
protection advice, the program is designed to appeal to kids.
The SunWise Kids website lets kids know the
skin cancer risks caused by too much sun exposure and how to protect themselves from sun damage. Kids will find a
trivia game and action steps to take to be sun safe. There is the Survivor's Challenge and SunWise Action Steps. In
addition, there is a UV Index scale that allows kids to learn more about each UV level. The SunWise Kids website
resource includes an educational area on the ozone layer that explains how we got to where we are in the increased
dangers of sun exposure.
If a school joins the SunWise Program and orders a UV meter, they will receive the
SunWise toolkit that includes activities and a UV sensitive Frisbee that changes color when exposed to the sun. With the
meter kids can measure how much UV radiation reaches their town. Kids can enter the UV information on the SunWise web
site. Then they can look at the data and compare UV numbers with the National Weather Service's UV Index. For more

Greenpeace has issued a report stating the
cancer death toll resulting from the
Chernobyl disaster is grossly underestimated, and that the true figures will exceed a quarter of a million cancers
cases, with over 100,000 fatal cancers. With the information compiled, Greenpeace and 52 scientists challenge the
International Atomic Energy Agency Chernobyl Forum report as a gross simplification of the real experiences of human
suffering.
In an effort to put faces on the statistical numbers, a new photography exhibit of victims will
be traveling through 30 cities worldwide. Some of the
photographs are featured online here. I
will warn you though, the photographs of the children are especially heartbreaking and will disturb you.
According to a statement on the Greenpeace website, "These powerful images are a timely reminder that human
lives are more than just numbers. For each statistic there is a person paying the ultimate price. Anyone who
doubts the dangers of nuclear power should visit the exhibition and see for themselves one of the reasons why we oppose
nuclear power. Twenty years on, every nuclear power plant bears the legacy of the nuclear industry's victims; and
every nuclear power plant represents the threat of becoming the next Chernobyl."
The world is facing an
energy crisis, and according to energy experts, it is not going to get better. But given the known dangers, are nuclear
power plants the way to solve the problem?

Public Citizen, a consumer watchdog group,
has petitioned the Food and Drug Administration, FDA, to remove Xenical, a
prescription obesity drug, off the market due to fears it can lead to
breast and colon cancer. At this time, there is also the possibility the weight loss drug will be approved for
over-the-counter sales, and the consumer group is asking the FDA to refuse approval of that move. However, last week,
in a potentially disturbing turn of event, the FDA granted drug company GlaxoSmithKline conditional approval for the
drug to be sold without a prescription as long as it met certain undisclosed criteria.
Dr. Sidney Wolfe,
director of Public Citizen's Health Research Group, said in a statement, "The failure to ban the prescription
version of this drug or worse, to make it much more widely available by allowing OTC sales, is a decision that is
likely to increase cancer incidence."
In the past, Public Citizen has alerted consumers about the
dangers of Vioxx, Ephedra, Bextra, Rezulin, Baycol, Propulsid and many other drugs years before the drugs were pulled
from the market.
