Recipe For Healthy Living: Perfect peppermint tea

Peppermint is an excellent source of manganese, vitamin C and vitamin A, carotenoids, and beta-carotene. Vitamin C, the main water-soluble antioxidant in the body is needed to decrease levels of free radicals that can cause damage to cells and decrease the risk of cancer. Peppermint is probably most famous for its use in our favorite white and red candy at Christmas time but it is gaining popularity to drink in teas to help decrease nausea.

A cup of fresh mint tea can help to soothe your stomach. If you are nauseous from cancer treatments try drinking peppermint tea. Another useful thing I found to work is to keep a small bottle of peppermint oil in your pocket and rub it on your wrist for smelling when you feel the queasy stomach coming on.

Whenever possible, choose fresh mint over the dried form of the herb since it is superior in flavor. The leaves of fresh mint should look vibrant and be a rich green color. They should be free from dark spots or yellowing. To store fresh mint leaves, carefully wrap them in a damp paper towel and place inside of a loosely closed plastic bag. Store in the refrigerator, where it should keep fresh for several days.

Recipe for a perfect cup of peppermint tea.
1 ounce fresh peppermint leaves
1 pint boiling water
Honey

Place the peppermint leaves in a cup and pour in boiling water. Cover the cup with a saucer and let it stand for 10 minutes. Scoop out the leaves with a spoon and add a little honey if you like it sweet.

Recipe for Healthy Living: Steel cut oats with blueberries

Since the 1970s, researchers have suspected that diet and nutrition are related to colorectal cancer risk. Numerous studies published since that time have confirmed the connection between what we eat and risk of this cancer. Many health experts agree that a high fiber diet is important for cancer prevention, but questions remain about how much and which types of high fiber foods may reduce colorectal cancer risk most effectively. This has led to interest in specific high fiber foods, especially whole grains.

Start the day with a bowl of whole grain cereal or oatmeal. For cold cereals, choose one that contains at least 6 grams of fiber per serving and make sure you pick one where sugar does not appear first, second or third in the ingredient list. Oatmeal is not only high fiber but studies show that it helps reduce cholesterol. But if you are like me I am not fond of the mushy breakfast food. Until a dear musician friend introduced me to steel oats. Now I can't get enough of these nutty oats and even eat them for late night snacks.

Steel cut oats are whole grain groats which have been cut into only two or three pieces. Which means the the inner portion of the oat kernel is not missing like in rolled oats. They are golden in color and resemble small rice pieces. Steel-cut oats are also known as coarse cut oats, pinhead oats, Scotch oats, or Irish oats. Because the steel cut oats are more natural with less pre-processing, they may be more nutritious than the more popular rolled oats. But to me they give off a more nutty taste and I like the small crunch over the mushy consistency of the rolled oats. The cooking time is longer on steel cut oats but really worth the wait.

When shopping for them in your grocery store, look for canisters much like coffee cans as they are kept in air tight containers.

Preparing your Steel Oats.

1 cup steel cut oats
4 cups water
1/2 tsp salt
1 tsp butter
Fresh Blueberries or other fresh fruits.

Combine oats and other ingredients in medium saucepan and bring water to a boil over high heat, then reduce heat to medium. Simmer for 30 minutes stirring occasionally to keep from sticking on the bottom. For the last 5 to 10 minutes of cooking time you will need to stir more frequently as it thickens. Spoon into a bowl and top with fresh fruit. Some people like to add a little milk to the bowl to give them a creamy texture. Makes 4 servings.

Toxins and stress create cancer and other disease

Keeping cancer and other diseases like diabetes, heart disease, obesity and more might be as simple as the choice we make in keeping toxins out of our bodies and stress out of our minds. Think about all of the money poured into medicines, which are chemicals, that only treat certain symptoms. And most of the time create other side effects that we have to take more medicines for that in turn create more side effects, and on and on. You see where I am going.

What if only a part of the millions and millions of dollars poured into research on medicines, was put to use in educating the public on the right choices of foods and nutrition to put into our bodies to keep them healthy and to learn how to relax and quit putting so many demands on ourselves. What if more funding went into organic farming instead of mass, quick produced, with fertilizers and steroids for faster turn around on the products. Personally I have had so many chemicals blasted into my body from chemo and radiation, and medicines for this and medicines for that, I am about to think that all of that is only hurting my body more. Are we brain washed to believe that we have to have a pill for everything?

My community does not have a health food store that sells fresh organic produce or meats. And the local grocery stores carry very limited amounts of those items. I did take it upon myself to talk to one of the produce managers who did start ordering some other variety of organic vegetables which I thought was nice. And it seemed to catch on with some other customers too. Maybe the trend in that store will be to start ordering more organic products.

I will be posting a series of blogs on personal research that I am doing and trying out, just because I am sick and tired, literally, of fighting cancer that reoccurs and using medicines that are ripping my body apart leaving my immune system even more at risk for infection and disease.

But the one thing that I want to emphasize in this blog right now, is to STOP EATING processed and canned foods. It may be quicker to heat up a can of food or something already processed and pre-made for us, but it is not healthier. Eating fresh organic vegetables and home made prepared foods without chemical preservatives and other additives is the way to go to start getting some of those toxins out of our bodies. If you can't find fresh in something, because seasons play a big part in our fresh vegetable selections, purchase frozen. Also purchase dried beans or other dried items and cook them instead of buying canned ones. They are healthier than canned. Eating raw vegetables or slightly steamed vegetables is more healthy because the vitamins and nutrients do not cook out of the food.

Horticulture therapy: the power of plants and flowers to heal

From houseplants to raised beds, to plant a seed, tend the soil, and watch a plant grow is one of the most inspiringly hopeful of activities. In hopefulness is found a kind of healing. According to the American Horticultural Therapy Association, horticulture therapy is defined as "a process utilizing plants and horticultural activities to improve social, educational, psychological and physical adjustment of persons thus improving their body, mind, and spirit." The American Cancer Society offers a list of some of horticulture therapy benefits one can expect from gardening that include:
  • Feelings of hope.
  • Stress reduction.
  • Social interaction.
  • Pain relief.
  • Improved muscle tone, flexibility, and cardiopulmonary capability.
  • Creativity and self-expression.
  • Enhanced self-esteem and improved mood.
  • Motor skill development.
As the New Year arrives, so do the gardening catalogs in the mail. Interested in receiving gardening catalogs but not certain where to start? Cyndi's Catalog of Garden Catalogs lists over 2,000 mail-order gardening catalogs for the home gardener.

Two of my favorite gardening websites and online catalogs are found at Seeds of Change and Seed Savers Exchange.

At Seeds of Change, you can find garden seeds, seed collections, cover crops, seedlings, fruit trees, garden tools, kitchen items, and a bookstore. All organic. In addition, Seeds of Change publishes a newsletter.

Seed Savers Exchange is a nonprofit organization that saves and shares heirloom seeds. According to Seed Savers Exchange, "Our organization is saving the world's diverse, but endangered, garden heritage for future generations by building a network of people committed to collecting, conserving and sharing heirloom seeds and plants, while educating people about the value of genetic and cultural diversity."

But, wherever you start, once you catch the gardening bug, you will understand why horticulture therapy is becoming an integrated part in healing programs adopted at some of the medical centers across the country.

Broccoli Brussels sprouts and watercress kill chemo-resistant cancer cells

Isothiocyanates, chemical compounds found in cruciferous vegetables such as broccoli, Brussels sprouts and watercress are able to kill cancer cells that have become resistant to chemotherapy drugs, according to the Free Radical Research Group research team from Christchurch School of Medicine and Health Sciences, University of Otago.

Basically, isothiocyanates drive cancer cells, and the protein Bcl-2 that seems to aid cancer cells in surviving, to apoptosis or in more descriptive terms -- a self-destructing suicide. The researchers are hoping this discovery might lead to the development of cancer-fighting drugs derived from isothiocyanates.

In the meantime, as they work on better cancer-fighting drugs based on beneficial chemical compounds found in foods, it won't hurt us to eat more veggies. Okay, except for the current recall of E. coli contaminated spinach. Right now, don't eat your spinach.

While the study suggests that not all cruciferous vegetable are equal in the ability to kill cancer cells, and specifically refers only to broccoli, Brussels sprouts and watercress -- other cruciferous vegetables include arugula, cauliflower, cabbage, Bok Choy, rutabaga, Chinese cabbage, Daikon, radishes, turnips, kohlrabi, kale, and turnip, mustard and collard greens.

Yankee Candle contributes scents to breast cancer

More pink is popping up -- this time on the shelves of Yankee Candle stores where pretty pink candles are displayed with labels of pretty pink breast cancer ribbons. Yankee Candle is proud to support the fight against breast cancer and is featuring the scent Fresh Cut Roses in 14.5 oz. jars for this special cause. A portion of all proceeds will be donated for breast cancer research and awareness. This candle -- a special and limited edition -- costs $19.99 and can be purchased in retail stores or on-line.

Yankee Candle has always been active in charitable endeavors and seeks to make a strong, positive impact on the communities in which they do business. They support the United Way and the American Heart Association -- and now they support breast cancer initiatives too.

Reality show contestant tackles competitions, ovarian cancer

MTV is currently airing another installment of the Real World/Road Rules Challenge reality show. This season -- called Fresh Meat -- pairs former show contestants with individuals who have never before appeared on any MTV reality show. These new contestants -- the fresh meat -- compete with the veterans in tense and strenuous physical and mental challenges for an array of prizes and for a grand award of $250,000. Winning the money could be life-changing for any one of these participants. But for one woman, it could also be life-saving.

Diem Brown, 25, was cast on the MTV challenge show before hearing her diagnosis of ovarian cancer. She didn't want to regret passing on the opportunity so with two chemotherapy treatments completed and armed with medication to manage nausea and other side effects, she packed her bags and headed for Australia where her days consisted of challenging stunts and tough competition. She survived it all -- although fatigue and pain sometimes slowed her down -- and she is busy surviving ovarian cancer too.

Brown has started a foundation called Live for the Challenge -- kind of like a Make-A-Wish Foundation for patients who are stuggling with medical difficulties. And her own personal wish is that ovarian cancer -- "the disease that whispers" -- would get a megaphone to attract more attention and more research. Because one in 50 women will get ovarian cancer and with no accurate screening for this disease, it leads to tragic outcomes for many women.

It is clear that Brown is one tough contender -- both on TV and in her everyday life. And that makes her a winner no matter what.

Deodorant recommended by oncologists, dermatologists

Strange things have happened to my skin ever since I encountered surgery, chemotherapy, and radiation for breast cancer. I developed an allergic reaction to the Tegaderm tape and latex used during and after my lumpectomy. My entire chest and one underarm were covered in red, itchy, burning, blistery bumps that oozed and then dried up. It took weeks of misery and a bunch of creams, lotions, and drugs to calm my skin and my anxiety too. Then I became allergic to an antibiotic while I was hospitalized for chemo-induced fever and low blood counts. The same horrible skin reaction again covered my chest and this time, my back also. It happened again a few months ago after a trip to the beach and I can only imagine that it was some combination of salt water, sunscreen, and chlorine that prompted this attack. I am still not sure of the cause. But it struck once again recently after a trip to my neighborhood pool. Sunscreen and chlorine were again my possible enemies. So I am staying away from all possible culprits now -- the tape, latex, certain antibiotics, sunscreen, salt water, and chlorine. And of course, the sun too. Perhaps treatment has made my skin even more sensitive than it already was. Perhaps something else is at fault. Regardless, I am now ultra careful about anything I put on my skin. I avoid most everything -- except for Dove soap and sometimes some fruity smelling lotion for my legs -- and I look for anything that is targeted for delicate skin.

So an advertisement in a magazine caught my eye today -- an ad for a hypo-allergenic deodorant that is highly recommended by dermatologists and oncologists. Naturally Fresh Deodorant Crystal Spray Mist and Roll On are both extremely gentle and also very effective. They are 100 percent natural and are fragrance free. They last for up to 24 hours, do not stain, and are good for one year. Like some deodorants that merely mask odor, these actually kill the bacteria that causes odor. Naturally Fresh Deodorant seems like a great find to me -- and it can be found CVS, Target, GNC, Hannaford Bros., A&P, Harmon Stores, Drug Fair, and Kerr Drug in the United States and Shoppers Drug Mart, Jean Coutu, and GNC in Canada.
