Thought for the Day: Sit down and eat a family meal - of fruit

I'm a huge believer in the power of foods to battle the ravages of cancer among other things. In a household I know of that contains a cancer survivor, the family gets together one time a week to have dinner around the dinner table. Sounds typical, right?

The only difference here is that everyone must eat several pieces of fresh fruit for dinner. No vegetables (those come on a different night) and no drinks besides water. Just fruit.

Amazingly, the kids in this family acclimated to the one-fruit-night pretty fast, and now they actually enjoy it. I thought it was a rather unique way to express the importance of fresh fruits on one's diet. After all, many believe that blueberries are one of the most potent anti-cancer foods there is. Why not get in the habit of eating them?

The "secret" to weight loss

Let's face it, there is no "secret" to losing weight. It's simple -- bank less calories than you spend and the weight will come off. You don't need to take pills or buy into the latest diet craze. Common sense is all you need.

I spoke with my oncologist the other day about my own weight loss -- I have lost nearly 14 pounds since the beginning of May, thanks to a no-sweets, low-sugar, low-fat, water-only diet with an emphasis on high fruit and veggie intake. Now this is no temporary diet. This is for life. My goal was never to lose a bunch of weight and then go back to eating junk -- I just wanted to shed a few cancer treatment-induced pounds while embracing a brand new healthy lifestyle.

My doctor was proud of my progress and shared his too -- he's lost eight pounds by cutting 500 calories from his diet each day. It sounds like a lot but this can be accomplished by cutting down on portions, giving up soda, and ditching high-calorie snacks. Observing the physical changes we both had made, he announced to the medical students in the room with us at the time that weight loss is not so hard -- well, maybe mentally hard, but not physically. He talked with his students about how to advise overweight patients -- surely a large percentage of people they see -- and reminded them of this formula: take in less than you spend. They nodded in agreement. And we moved on to other topics. There really was nothing more to say. Simple, I tell you. Give it a try.

Recipe for Healthy Living: Steel cut oats with blueberries

Since the 1970s, researchers have suspected that diet and nutrition are related to colorectal cancer risk. Numerous studies published since that time have confirmed the connection between what we eat and risk of this cancer. Many health experts agree that a high fiber diet is important for cancer prevention, but questions remain about how much and which types of high fiber foods may reduce colorectal cancer risk most effectively. This has led to interest in specific high fiber foods, especially whole grains.

Start the day with a bowl of whole grain cereal or oatmeal. For cold cereals, choose one that contains at least 6 grams of fiber per serving and make sure you pick one where sugar does not appear first, second or third in the ingredient list. Oatmeal is not only high fiber but studies show that it helps reduce cholesterol. But if you are like me I am not fond of the mushy breakfast food. Until a dear musician friend introduced me to steel oats. Now I can't get enough of these nutty oats and even eat them for late night snacks.

Steel cut oats are whole grain groats which have been cut into only two or three pieces. Which means the the inner portion of the oat kernel is not missing like in rolled oats. They are golden in color and resemble small rice pieces. Steel-cut oats are also known as coarse cut oats, pinhead oats, Scotch oats, or Irish oats. Because the steel cut oats are more natural with less pre-processing, they may be more nutritious than the more popular rolled oats. But to me they give off a more nutty taste and I like the small crunch over the mushy consistency of the rolled oats. The cooking time is longer on steel cut oats but really worth the wait.

When shopping for them in your grocery store, look for canisters much like coffee cans as they are kept in air tight containers.

Preparing your Steel Oats.

1 cup steel cut oats
4 cups water
1/2 tsp salt
1 tsp butter
Fresh Blueberries or other fresh fruits.

Combine oats and other ingredients in medium saucepan and bring water to a boil over high heat, then reduce heat to medium. Simmer for 30 minutes stirring occasionally to keep from sticking on the bottom. For the last 5 to 10 minutes of cooking time you will need to stir more frequently as it thickens. Spoon into a bowl and top with fresh fruit. Some people like to add a little milk to the bowl to give them a creamy texture. Makes 4 servings.

Stress attributes to disease

I was going to write a blog later in my series of blogs on toxins and stress and disease from the studies that I have been reading for the last month. But since a comment was made about stress and whether it has a correlation to disease to the previous blog I wrote on toxins and stress creating disease in our bodies, I will jump ahead and share some research I found on the relation of stress and disease. A relation to stress and disease has been researched by many doctors, psychologists, and medical research facilities and conclusions are that stress does several things to the body causing it to shut down in areas that can effect the body with disease and illness.

Do the common phrases, Tension Headache, Upset Stomach, Shaky Nerves, Tight Chest, ring a bell? Studies showed that work place stress has created an increase in heart disease and high blood pressure as well as making the body more susceptible to flu and viruses. It also has shown that stress can be related to Type 2 Diabetes as well as obesity. "Stress in general can disrupt the body's ability to process glucose, especially in people whose genetics make them vulnerable", said Richard Surwit of the Duke University Medical Center in a research article in the November/December issue of the journal Psychosomatic Medicine.

Recipe for Healthy Living: Fruit and nut bars

I haven't yet made these Fruit and Nut Bars, but I managed to consume several of them during my stay at Canyon Ranch in Tucson, Arizona. Besides bowls of apples, oranges, and bananas provided at every location at the Ranch, guests of this health and healing destination can request additional healthy snacks at dining areas. Of everything offered, this was my favorite.

Ingredients

1/2 cup chopped pecans, lightly toasted
1/2 cup chopped almonds, lightly toasted
3/4 cup honey
2 3/4 cups rolled oats
1/2 cup dried cranberries
3/4 cup dried chopped apples
1/2 cup raisins
1/2 cup sliced dates, about 10 medium
1 teaspoon cinnamon

So long, sweet things

I've passed the two-year breast cancer survival mark and finally, I'm making a major life change. Why has it taken me so long? I'm not sure. I guess the time is right and it never was before. There's no reason to dwell on what I could have done sooner. What matters is that I'm taking charge right now.

First it was soda. I totally eliminated it from my diet. It wasn't such a big hurdle, though, because it was never much of a habit. But sweets -- another story entirely.

I love -- or shall I say loved -- sweets. Brownies, especially the gooey variety, were my favorite sugary treat. My oldest child loves them too and together, we would occasionally mix up a batch, wait impatiently while they baked, and then scarf down the whole pan.

There's a brownie mix in our pantry right now. Six-year-old Joey keeps asking me if we can make them. I keep telling him, "No, mommy is not eating sweets anymore." Which means he is not eating sweets anymore -- unless they come from a secret source. It's killing him that I won't give in and make our cherished chocolate dessert. So I promised him I will make the brownies one day soon. We have an upcoming party to attend and this will be my contribution. I just can't make them, keep them at home, and expect not to eat them.

It's been two weeks since I've consumed anything remotely sweet -- like candy, cakes, ice cream. I'm not counting sweeteners that are surely buried in the foods I normally eat -- I'll get there eventually -- but I am committed to passing on anything obviously dripping in sugar. That means no chocolate chip cookie bars that greeted me at work one day. No dipping into the mint bowls at restaurants. No bulk-sized bag of M&Ms sitting in my kitchen cupboard.

Nothing. I can't do it any other way. All or nothing. I'm going with nothing.

I like how I feel. The headaches I suspected were fueled by sugar are less frequent. My stomach feels less full. I know I am headed for better health. My kids are too. My body and my wallet should lighten up a bit too.

When I long for that sweet something, I reach for fresh fruit. Strawberries, apples, pears, bananas, and cantaloupe fill our kitchen now. Joey ate three bananas last night. I figure it would have been three brownies if he'd had the choice. For his sake and mine, I'm glad he didn't.

Recipe for Healthy Living: Spinach and fruit salad

Calorie for calorie, leafy green vegetables like spinach with its delicate texture and jade green color provide more nutrients and vitamins than any other food. Spinach carotenoid combats cancer. Here is a healthy spinach salad good enough for any lunch main course.

Vicki's Spinach Salad with Fruit.
Fresh baby spinach leaves
1 carrot thinly sliced
1 celery stalk thinly sliced
1/2 red onion thinly sliced
1 cup grape tomatoes
1/2 cup craisins (dried cranberries)
1/2 cup chopped fresh apple
1/2 cup chopped fresh pear
1/2 cup slivered almonds
2 hard boiled eggs sliced
6 strips crispy cooked bacon crumbled

Vicki's Dijon Mustard Vinaigrette
1/3 cup extra virgin olive oil
3 tablespoons balsamic vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon Dijon mustard
1 tablespoon freshly chopped chives

Toss all of the salad ingredients except the eggs in a large mixing bowl. Whisk together the ingredients for the salad dressing and drizzle over the salad and lightly toss again. Top with the sliced hard boiled eggs.

Thought for the Day: How about a purple pick-me-up?

The results may not be immediate but a recent study indicates that purple grape juice has long-term health benefits and can help combat major illnesses, like heart disease and cancer.

A study at Glasgow University measured levels of antioxidants -- thought to have a protective effect against cancer -- in a range of popular juice drinks. Purple concord grape juice came out on top, with the highest levels and range of antioxidants. Incidentally, this juice has the same level of these compounds as Beaujolais red wine.

It's recommended that we add a glass of grape juice to our daily diet and count it as one of our five daily fruits and vegetables.

Researchers caution, though, that studying antioxidants in the lab is different than studying their effect in the body.

"The problem is that we don't know what happens when they enter the body and are dissolved," one researcher says. "Obviously, eating a lot of fruit and vegetables has been shown to be good for your health, but it is not known for sure which compounds are responsible for this effect."

Still, it's not a bad idea to down that glass of juice every day -- unless, of course, you are worried about sugar content like me.

Fruit, veggies, milk lower liver cancer risk

You're in luck if you like fruit, vegetables, and milk -- because Italian researchers say these items appear to reduce the likelihood of developing liver cancer.

Diet plays a significant role in the risk of liver cancer, says the lead researcher of this study who singles out fruits and vegetables as the foods with the most protective effect.

Subjects of this study -- published in the International Journal of Cancer -- were 185 patients with liver cancer and a comparison group of 412 controls without cancer. Participants responded to questions about diet, and their answers showed that as intake of certain foods went up, the risk of liver cancer went down. Factoring out other issues possibly contributing to this indication, researchers found that high intake of milk and yogurt cut the risk of developing liver cancer by 78 percent. High consumption of white meat lowered the risk by 56 percent, and when combined with high intake of fruit, this number dropped to 52 percent.

These finding are particularly important for patients with hepatitis B and hepatitis C (HCV) infection. But overall, experts say anyone wishing to ward off liver cancer should adopt a diet rich in fruits and vegetables, limit alcohol consumption, and avoid HCV infection by practicing safe sex and never sharing needles.

Nigella Lawson: goddess of food porn changed by cancer

However unintentional she says it has all been when it comes to the sultry and seductive persona that oozes sexuality through the television screen during her cooking shows, How to be a Domestic Goddess author Nigella Lawson has made a career out of making food sexy and the act of food consumption sensual. It is part of her not-always-so-subtle coy kitchen charm.

But if we believe her life to be as silky smooth and decadent as warm cream flowing over a morning bowl of juicy plump strawberries, and equally as charmed as she is charming, we would be mistaken. Yes, she is remarried to multi-millionaire, ad man and art dealer Charles Saatchi, but she is also the widow of journalist and writer John Diamond, who died of tongue cancer five years ago, leaving her suddenly mother and father to their two children, Cosima and Bruno.

A decade earlier, Lawson's mother had died of liver cancer. Her sister Thomasina died in her 30s of breast cancer. Cancer changes people. It is unavoidable, and the change can take many forms. For Nigella, who in the public eye has taken criticism for her ample figure and lack of concern for the fat content of food, has an almost unreasonable fear about thinness. After watching three family members waste away and die from cancer, she sees thin as a sign of illness.

"So even though I mind it when I put on weight I have a visual memory of seeing those people become skin and bone, and that gives me a slight reality check," explains Lawson. In watching her cooking show Nigella Bites, she came through as warm, down-to-earth, without a care for pretentious protocol or rules for the sake of rules. It is the way she cooks, and I get the feeling it is the way she lives. Cancer changes every person it touches and shapes perspectives about what is truly important in life. Being comfortable and enjoying yourself, including the food you eat, is a good recipe for life. A recipe Nigella seems to dish up with ease.

Nigella Lawson is Food Network's newest host in Nigella Feasts. On January 7, the theme of the show will be Feel Good Food featuring Smoked Salmon, Avocado and Pumpkin Seed Salad, a Vietnamese Prawn and Glass Noodle Salad, a colorful Antioxidant Fruit Salad, and a Syllabubbed Yogurt. Yum.

Horticulture therapy: the power of plants and flowers to heal

From houseplants to raised beds, to plant a seed, tend the soil, and watch a plant grow is one of the most inspiringly hopeful of activities. In hopefulness is found a kind of healing. According to the American Horticultural Therapy Association, horticulture therapy is defined as "a process utilizing plants and horticultural activities to improve social, educational, psychological and physical adjustment of persons thus improving their body, mind, and spirit." The American Cancer Society offers a list of some of horticulture therapy benefits one can expect from gardening that include:
  • Feelings of hope.
  • Stress reduction.
  • Social interaction.
  • Pain relief.
  • Improved muscle tone, flexibility, and cardiopulmonary capability.
  • Creativity and self-expression.
  • Enhanced self-esteem and improved mood.
  • Motor skill development.
As the New Year arrives, so do the gardening catalogs in the mail. Interested in receiving gardening catalogs but not certain where to start? Cyndi's Catalog of Garden Catalogs lists over 2,000 mail-order gardening catalogs for the home gardener.

Two of my favorite gardening websites and online catalogs are found at Seeds of Change and Seed Savers Exchange.

At Seeds of Change, you can find garden seeds, seed collections, cover crops, seedlings, fruit trees, garden tools, kitchen items, and a bookstore. All organic. In addition, Seeds of Change publishes a newsletter.

Seed Savers Exchange is a nonprofit organization that saves and shares heirloom seeds. According to Seed Savers Exchange, "Our organization is saving the world's diverse, but endangered, garden heritage for future generations by building a network of people committed to collecting, conserving and sharing heirloom seeds and plants, while educating people about the value of genetic and cultural diversity."

But, wherever you start, once you catch the gardening bug, you will understand why horticulture therapy is becoming an integrated part in healing programs adopted at some of the medical centers across the country.

Recipe for Healthy Living: Chemo popsicles

Chemotherapy can upset the digestive system. It can cause nausea and vomiting -- although I never did throw up during my own chemotherapy, thanks to medication for these side effects. Chemotherapy can diminish overall feelings of wellness and can cause sore gums and mouth sores and dry mouths. Clearly, chemotherapy can ruin an appetite.

But patients receiving chemotherapy need to eat. And they need to drink. They need to maintain nutrition and energy and strength during a physically taxing time. And so the challenge facing many entrenched in chemotherapy is how to eat when the act of chewing, swallowing, and digesting food is so completely unappetizing.

Barbara Curtis shares in a chapter of Chicken Soup for the Breast Cancer Survivor's Soul a recipe that made a difference for her sister during her worst days of chemotherapy.

Her recipe -- for chemo popsicles -- includes essential ingredients. Fruit and tofu provide phytochemicals, protein, and liquids for depleted bodies. The cool popsicle soothes sore mouths and settles stomachs. And the ease of putting together this simple snack is nothing short of tempting.

My advice -- save this recipe. And savor it too.

Chemo Popsicles

Fresh-squeezed orange juice, one 8-ounce glass
Frozen mangoes, 1/4 package, or 1 cup frozen berries
1/4 square tofu, medium firmness
One banana
Add passionfruit juice or other fruit juices for flavor

Put all ingredients into a blender. Blend to liquify. Add more juice if mixture is too thick -- it should be as thick as a smoothie. Pour blended mixture into Tupperware or plastic popsicle molds and freeze.

Eggplant purple tomato with the power of blueberries

Oregon State University (OSU) researchers have been working on creating a purple tomato for several years and predict that one should be available in the local grocer's within two years. The eggplant purple tomato will have all the healthy tomato antioxidant lycopene goodness the red orbs offer now with the added benefit of blueberries nutrition in phytochemicals believed by some to offer cancer prevention functional food benefits.

According to OSU Professor Jim Myers, the new hybrid eggplant purple tomato will be the first true purple tomato. According to an OSU backgrounder on the purple tomatoes, hundreds of years ago, explorers discovered purple tomatoes in the wild, but those tomatoes never made it to the table because the fruit was small and some were poisonous. In the 1960s and 1970s, scientists collected seeds from these tomatoes and started to breed them with modern hybrids, making them safe to eat. They discovered that the new purple tomato, unlike the traditional red, contain high levels of anthocyanins, a chemical found in dark fruit pigments such as blueberries and grapes.

Some days, science is just plain fun.

Call to ban candy fruit and alcohol-flavored cigarettes that target kids

The local chapter of the New York City American Cancer Society is asking that candy-flavored cigarettes be banned from sale because they feel it is a tobacco industry marketing ploy to appeal to teens. During a City Council meeting, the bill introduced would prohibit the sale of cigarettes with fruity flavors, like Twista Lime, and Midnight Berry; candy flavors like Warm Winter Toffee; and any cigarettes with flavors resembling chocolate, vanilla, honey, candy, mint, cocoa, dessert, or an alcoholic beverage.

But is this the way to go? According to the Epoch Times, Mayor Michael R. Bloomberg, an anti-smoking advocate, who has not shown support of the ban, is concerned that banning fruit and candy-flavored cigarettes will make them more popular with kids they are trying to protect, and end up having a reverse effect of what the bill intends. Bloomberg has raised taxes on cigarettes, banned smoking in restaurants and bars, and donated $125 million of his own money in campaigns and programs to stop smoking. We have not contacted Bloomberg for a direct comment on the ban and are merely sharing what the Epoch Times has published about his position.

Forty states have addressed the issue of candy and fruit-flavored cigarettes after frustration that the federal government has not take a stand against R.J. Reynolds marketing of cigarettes to young people. R.J. Reynolds has agreed to a settlement with the attorney generals of 40 states to stop selling candy, fruit and alcohol-flavored cigarettes in the United States.

Along with the ban on Camel Exotic Blends including Mandarin Mint, Dark Mint, Crema, Izmir Stinger, Twist, Cinnzabar, Mandalay Lime, Aegean Spice, Bayou Blast, Beach Breezer, Margarita Mixer, Midnight Madness, Back Alley Blend, Kauai Kolada, Twista Lime, Winter MochaMint, Warm Winter Toffee, Blackjack Gin, Screwdriver Slots and SnakeEyes Scotch; Salem Silver including Dark Currents, Fire & Ice, Deep Freeze and Cool Myst; and Kool Smooth Fusions including Mintrigue, Mocha Taboo, Midnight Berry and Caribbean Chill, the tobacco company agreed to stop promotional materials that suggest candy, fruit or alcoholic beverages.

What do you think the best solution is to the problem of cigarettes that appear to be marketed to appeal to our youth? A ban? Increased taxing on cigarettes? Or do you have a more creative solution?

New antioxidant enriched flours and fruit seed flour

One day, look for these enhanced food products to appear on supermarket shelves, because more and more, consumers are demanding that the food they buy offer health benefits beyond what has been traditionally offered, and scientists are discovering ways to make that happen. Recently, University of Maryland researchers created, and patented the process, of transforming wheat, corn and rice flours into antioxidant powerhouses in the newest offering of functional foods. They have also devised a means of developing a flour based on fruit seeds that were discarded in the making of fruit juice.

The researchers assure that the process of enhancing flours is environmentally friendly -- which is another concern of many consumers. We want to be eat for good health, but we also want to be good to the earth. Antioxidants are known to offer cancer prevention benefits and are naturally found in whole foods such as fruits, vegetables and berries. Using antioxidant-enriched flours will be one more way to incorporate antioxidants into our daily diet.

This finding, along with the news of mandarin orange juice liver cancer prevention benefit, will be presented during the four-day conference Functional Foods and Health, at the 232nd national meeting of the American Chemical Society.
